Serial Cabernet Sauvignon 2021
Serial Cabernet Sauvignon 2021
Cabernet Sauvignon from Paso Robles, Central Coast, California
Winemaker Notes
The first-ever Cabernet Sauvignon release from our estate Deseo Vineyard in the Estrella District, deepening Serial’s roots in Paso Robles. A rich ruby-purple color foreshadows aromas of black currant, peppercorn, and tobacco leaf. Explosive flavors of black cherry and vanilla unfold with notes of cigar box and cedar. A high-toned finish displays fresh textures and tightly wound tannins that promise to reward careful cellaring. Aged for 14 months in 45 percent new French oak barrels. Only 300 cases produced.
The 2021 growing season was a winemaker’s dream in Paso Robles. Cool spring conditions yielded to warm and steady summer temperatures, followed by moderate weather into harvest. Patience was required as the grapes reached full maturity, and the payoff was worth the wait: excellent fruit structure and beautifully balanced flavors. A true standout vintage for Paso Robles.
Food Pairing
Pairs well with hard cheeses, red sauce pasta dishes, and dishes with tomato sauce.
