I tasted a tank sample of the final blend of Salvestron’s 2022 Sauvignon Blanc, a mix of barrel-aged and tank-matured components, sourced from the winery’s Crystal Springs Vineyard and the Laurent Vineyard. A blend of three different clones planted on two different rootstocks, it offers up lovely pear, fig and grapefruit aromas on the nose, while the palate is medium-bodied, crisp and lively. There’s a hint of fleshiness, but overall, the wine is more streamlined in shape, with a silky texture and long, elegant finish.

Pairs well with cheddar cheese grits with grilled barbecue shrimp.
