This Champagne is the first in Doquet’s “Coeur de Terroir” series and it comes from the chalk and clay soils from Pascal’s best sites in the mid-slope of Vertus – including lieux-dits Barrilliers, Nuisats, Vieille Voie, Corvées, Grange au Bar, Les Grues & La Bare (for the Pinot Noir). The wine is a blend of 70% chardonnay with 30% Pinot Noir, all vinified and aged for an additional 11 months in neutral oak barrel. After bottling the wine was aged for 12 years sur latte before disgorgement with a dosage of 2.0g/L MCR. It’s a full-bodied Champagne from this site with leesy richness and length.
