Winemaker Notes
The wines, made from 100% Pinot Noir grapes and around 40% destemmed, ferment completely for 15 days with 2 daily punchings of the cap, first in cement vats (alcoholic) and then in stainless steel vats (malolactic). Aging takes place for 16 to 18 months in 228 L French oak barrels, 1/3 of which are new.
The Savigny-Lavières Premier Cru du Domaine Tollot-Beaut are simple, pure and fresh wines, embodying everything we love about the wines of Côte de Beaune. La robe is bright ruby-purple for this 2021 vintage. The nose is very expressive, with small red and black berries, morello cherry and blackcurrant, and a hint of sweet spice, a vanilla base, finishing with a few smoky notes. The palate features the energy of red berries, cranberry, raspberry and redcurrant, the freshness of heather and the indulgence of chocolate and boysenberry. The finish is fresh citrus and gently spicy.

Pairs well with rabbit with mustard or small game birds such as stuffed quail or pigeon with bacon and mushrooms.
